Marinated and seasoned duck breast pan fried on skin till golden brown, deglazed with rum, thickened with applebutter and flavored with carmelized onion, garlic, rosemary, sage, worchishire, and dijon mustard and served with savory maple grits garnished with cinnamon glazed walnuts and lemon slice. Your choice of vegetable.

Algerian Style Chicken and Couscous

Chicken breast stewed with carrots, pumpkin, raisins, coconut and onion in broth flavored with cumin and other spices. Served with seasoned couscous garnished with pistachios. Accompanied by curried spinach and tomatoes. 

Duck Cassoulet Stuffed Portabello

Mariniated and grilled portabello cap stuffed with duck confit, seasoned butterbeans and andoillie sausage. Served with roasted buttnernut squash w/ fresh rosemary and mustard green & fennel gratin.



Dijon Chicken with White Wine and Mushroom Sauce

Succulent white meat chicken with a white wine and mushroom cream sauce. Garnished with flash fried capers, served with buttered and seasoned egg noodles and your choice of vegetable.

Special Recipe Fried Chicken

Chicken is marinated in rosemary and sage infused brine, then slow roasted till tender. Then battered and fried to perfection! Served with southwest cabbage and jicama slaw, green beans and bacon and whipped mashed potatoes with chicken gravy.

Turkey with Brown Butter Almond Fig Sauce

Turkey cutlets in a sauce composed of brown butter, pureed figs, tarragon, mustard and ground almonds. Garnished with lemon zest. Served with quinona pilaf and your choice of vegetable.

Turkey with Curried Apple-Cran Chutney  

Slow cooked turkey with chutney of carmelized apples, curry, dried cranberries rehydrated in apple cider, walnuts and diced sauteed onion. Served with jasmine rice and your choice of vegetable.
