Beef Bourguignon

Classic Bourguignon- Beef is marinated, seared in bacon drippings then oven braised in red wine, congnac, traditional aromatic vegetables, potatoes and other complimentary herbs and spices.

Crispy Orange Ginger Beef w/ Cashews

Marinated skirt steak, braised till tender then dredged in seasoned cornstarch and flash fried until crispy. Tossed with brocoli, water chestnuts, chinese baby corn and asian orange ginger sauce. Garnshed with sesame seeds, candied ginger and cashews. Served with steamed rice.

Signature Strip

New york strip, marinated and cooked low and slow then flame broiled and served with either gorgonzola honey butter or balsamic reduction. Served with grilled asparagus and creamy califlower gartin. Also available traditionally cooked on grill or pan seared.

Saurbrouten Short Ribs

Short ribs marninated for 72 hours in red wine, onions, juniper berries and many other herbs and spices. Slow cooked for hours and served with traditional saurbrouten sauce. Served with German potato and green bean salad or potato pancackes, and braised sweet and sour red cabbage with caraway seeds.

Pennsylvania Brisket

Beef brisket, smoked for 3 hours then braised in Yeungling, brown sugar and a combination of herbs and spices influenced by German, Italian and Dutch culture . Served with either a Yeungling bbq sauce or classic beef demi glace.

Optimus Prime Rib

I've tranformed the classic prime rib into something extrodinary.. Studded with garlic, encusted in rosemary, sea salt and black pepper then applewood smoked with traditional aromatics for hours. Served with fennel and leek braised in a butter-rum sauce, and hericots verts sauteed in olive oil with garlic and breadcrumbs.

Traditional Beef Tips with Mushroom Sauce

Seasoned sirloin, seared then braised in brown sauce, red wine, sauteed mushrooms, bell peppers, onions, garlic and herbs. Cooked til tender and served with butter and parsley egg noodles and carmelized brussel sprouts.
